Char levels are 1, 2, 3 and 4 with 4 being the deepest. Influence Guide In both American and European new oak casks, the wood is untouched by any other liquid. Whatever American oak is filled with, it will be influenced by the fresh oak character. The heat treatment given to the cask will affect the concentrations of some of the flavours extracted from the wood but generally with new oak, you can expect high levels of coconut, vanilla, sweetness, and spice. Traditionally in Scotch Whisky, virgin oak was considered to impart too much of a woody note, but this makes it ideal if you are looking for drinks with shorter maturation times, or for a cask that will give you that extra level of flavour in a finish or for blending. European oak is generally less dense and more porous than American oak which allows for more wood to spirit contact. Although still imparting vanilla notes, a lower concentration of oak lactones means that Fresh European Oak imparts less woody coconut aroma than American Oak, whilst having greater levels of tannins and generally adds more toasted spice notes, fruit and colour.

Smaller cask sizes are fantastic for imparting flavours over a shorter period of time for small batch finishes, new product development and the maturation of cask aged beers. Red wine cask wood can lend the spirit subsquently matured in them fruity characteristics and a red hue. Scotch whisky wood will have absorbed some constituents of the whisky it contained as the spirit and the wood interact with each other and these flavours can be picked up in future fills.

Influence Guidance American white oak is an ideal wood for maturing most drinks, structurally strong, less liable to seepage, and typically offering sweeter flavours; vanilla, floral, caramel, and coconut. The American practice of charring a barrel prior to filling allows for greater depth of penetration into the wood by the liquid as well as providing a layer of carbon which is effective at removing some less desirable characteristics found in some young spirit. The previous filling with bourbon will help soften some of the more intense flavours from the wood but it will remain a very active cask. With plenty of wood extractives and some constituents of the bourbon it previously held taken up by the wood and adding to those powerful sweet vanilla, coconut and spicy wood notes, it is great for having a fast influence upon your own spirit’s character but, also over a longer time giving even greater cask input to the matured drink.

Fortified and aged examples (particularly those that have been barrel aged) tend to be very dark in color due to oxidation with aroma notes of coffee, fruit cake, raisins and toffee.

Traditional port pipes will have been used for many years before being sold and so the influence of the wood compounds is less than that of the wine flavours. Port Hogsheads will tend to have been used for less time and so in addition to the wine, the oak flavours will be more prominent adding vanilla and spice to the fruit of the wine.

    These are standard American casks which are just that bit further along in their life cycle. They are available in barrel, hogshead and puncheon sizes. The remaining wood influence is dependent upon the number of times the cask has been refilled; the level of extractives reduces with each fill. This alteration is ideal if you want the distillery characteristics to shine through more prominently or if you want the wood influence to develop gently and express itself in a subtler manner. Although flavours will begin to develop from the time of filling, these casks are ideal if you are looking to give a spirit many years of maturation as they allow for this without the spirit potentially becoming overly woody.

The end results vary depending on the variety of sherry cask used; for example Oloroso imparts rich and nutty notes whilst Pedro Ximenez would impart a more spicy/chocolate note.

The wines used to fill them also lend any spirit subsequently matured in them, some of their fruity characteristics and red hue.
